Thomas Gimblett, a native of Vancouver cooked for twenty years in some of the finest golf courses in British Columbia. Joanne, Thomas's wife, made her escape from a career in medical diagnostics. Together they have opened a dream come true. Over the years both wanted to open a restaurant with the same goals in mind, quality, and great customer service, something they would expect from any restaurant they would visit.
They began their journey in Joanne’s native town (Fredericton, New Brunswick) that’s how the name Racines (French for "roots") was born for the restaurant. They have been open since April 2005 and the quality of food and customer service has not only impressed local critics but has earned them national recognition "Where to Eat in Canada" for 2007 to 2010.
Working with local farmers & markets has helped the restaurant thrive. The Culinary innovation & contemporary cuisine of Chef Thomas Gimblett has been highly received from patrons that visit Racines.
